Overview** My client a Large established Convention Centre in Johannesburg is urgently recruiting for a Food Controller who will report directly to The Senior Executive Head Chef. **Remuneration Structure Highly Competitive Market related salary Negotiable Provident fund compulsory Employee: 3% Company: 3% Requirements : Minimum of a Matric (Grade 12) High School Qualification Tertiary qualification in food safety At least 5 year’s experience as a Food Controller Excellent numerical skills Speak and read English on a high level Traceable references Willingness to do shift as well as weekend work Own Transport Responsibilities : Control food outlets in terms of wastage and pilferage Prepare variance analysis for food and communicating with relevant parties Taking food samples and temperatures during exhibitions, lunch and dinners Update and maintain receipts onto stock system Check and verify systems transactions (POS, discounts, staff meals, pricing etc.) Check the cost of sales in all food outlets and ensure that costs are within budget Continuously study weaknesses in food control and provide suggestions for improvement Preparing daily food report Submit monthly stock report for management review Conduct surprise spot checks on stock Participate in stock taking Check and ensure that no material is issued out from the store without requisition or approval Count, weigh or measure items of incoming orders in order to verify information against invoices/orders Examine and unpack incoming orders; record shortages and reject damaged items, route items to various departments/fridges Examine incoming orders to ensure they meet specifications Responsible for monitoring the returns process Sort, count, identify, verify and track all material against invoices, orders, bills or other records Perform regular material warehouse audits to ensure that equipemtn is undamaged and maintained neatly throughout the kitchen Advise Management of cycle count issues Ensure that all products received in the stores or directly delivered to stores/fridges are of satisfactory quality
